On our first trip to Maui many years ago, we took a day drive around the west end of the island and encountered both the best Lilikoi sold on the side of the road (I still regret not buying more!) and the best banana bread I’ve ever tasted.

I can’t pinpoint exactly what flavor made it so good, but when we got home I did a lot of experimenting with banana bread recipes and ingredients to try to recreate that flavor. While it isn’t exact, I think this recipe is pretty close!

It’s perfect with a cup of coffee in the morning, or a snack in the afternoon. Best Banana Bread Recipe

Ingredients:

½ cup Coconut Oil, melted

½ cup Brown Sugar

½ cup Molasses

2 Eggs

1 teaspoon Vanilla Extract

1-½ cups All-purpose Flour

1 teaspoon Baking Soda

½ teaspoon Salt

½ cup Sour Cream

2 Medium Bananas, sliced

Instructions:

Preheat oven to 350 degrees F (175 degrees C)

Grease a 9×5 inch loaf pan

In a large bowl, stir together the melted oil, molasses, and sugar. Add the eggs and vanilla, and mix well. Combine the flour, baking soda, and salt; stir into the wet mixture until smooth. Finally, fold in the sour cream and bananas. Spread evenly into the prepared pan.

Bake at 350 degrees F for about 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely (or to slice and eat while still warm, you choose).

Makes one loaf. 

And now, my apologies: I don’t know the nutrition information, I’ll just say I know it isn’t the healthiest thing you could eat today. However, it is quite tasty! :0
