A Bold Holiday Claim? Yes, but these are Worth it!

Every year, there’s one recipe I HAVE to make for the holidays and it’s these: the best ever gingersnaps. I know there are differences of opinion about the best style of gingersnap, but I’ll always prefer a chewy, crackly gingersnap rolled in crunchy coarse sugar. And that is this cookie. It’s hard to beat the smell of baking gingerbread – the spice and the warmth fills your house with cozy holiday cheer. So, try these and let me know what you think.

Gingersnap Ginger cookies for the holidays

First a note – this is a recipe I got from my mom. They’re called Georgie’s Winter’s Best Gingersnaps and I have to tell you, I don’t know the original source. If you have any clues, please let me know so that I can give credit where credit is due. I’ve also always been a little confused by the name, so I would love some clarification on the backstory.

And now,

Georgie’s Winter’s Best Gingersnaps

Ingredients

3/4 c. shortening
3/4 c. butter
2 c. sugar
1/2 c. molasses
2 eggs
4 c. flour
2 tsp. baking soda
2 tsp. cloves
2 tsp. cinnamon
2 tsp. ginger

Instructions

Using a mixer, work the butter and shortening together until creamy. Gradually work in sugar. Continue creaming until light and fluffy. Add eggs and molasses slowly. Sift together the dry ingredients. Gradually add to cream mixture and beat well. The mixture will be soft, so chill the dough for at least one hour (overnight is best). With a spoon, dip out small pieces of dough, about the size of walnuts, and roll them by hand into balls. Roll the balls in granulated sugar. Place on greased cookie sheets about two inches apart. While baking the cookies will spread and crackle on top. Bake in a preheated oven at 375 F for 11 minutes or until light brown. Makes about 6 dozen. Store in air-tight container for several weeks. Tastes good right out of the oven, but even better after a day or two – trust me!
